Does the converted picture keep the information the camera wrote into it?
No, and there is no setting for it because there is nothing to set. The picture is decoded to pixels and drawn onto a fresh canvas, and a canvas has no place to put the camera model, the date or the GPS position the original carried, so none of it is in the file you get back.
